No-Cook Tomato Sauce

It’s unusual that I make a recipe and love it on the first try. Honestly, it’s almost unheard of! But this easy-peasy, no-cook tomato sauce had me at first bite. I truly believe it will be one of those recipes I use over and over. And, it makes me think of a dear friend.

When a meal provides great nutrition, tastes fabulous, and reminds you of wonderful times, it doesn’t get much better.

Here it is…

No-Cook Tomato Sauce

In a large bowl, mix together… -1 tbsp dried oregano -2 cloves minced garlic -1/2 c torn fresh basil leaves -6-8 fresh Roma/similar tomatoes, roughly chopped (remove core & squeeze out seeds) -1/4 tsp red pepper flakes -1/2 cup olive oil -Salt and pepper to taste

Leave in a bowl on the counter, covered, all day long. Give it a toss a couple times during the day. Toss with hot pasta. I like to add grilled chicken on top.

This recipe makes enough sauce for about a pound (typical box) of pasta or you can use it over grilled chicken, fish, or shrimp.
